Broccoli, Feta and Caramelised Onion Strata

A ‘Strata’ is a bread bake; it’s a fantastic way to make an affordable and absolutely delicious main meal quickly and easily.

Ingredients: (serves 8)

Caramelised onions:

2 Onions (halved and sliced)

¼ cup Sunflower Oil

Pinch Salt

2 Tbsp. Sugar

2 Tbsp. Balsamic vinegar

Strata:

1 Packet Sasko Low GI Seeded Bread Buns (cubed)

300g Broccoli (cut into small florets)

200g Feta

8 Extra-large Eggs

2 cups Milk

Salt and pepper

Method:

  • Place a large frying pan on medium heat, pour in the oil and add the onion slices, season with a good pinch of salt and fry for 10 minutes or until softened.

  • Add the sugar and balsamic vinegar and fry for a further 10 minutes or until sticky and delicious.

To make the Strata:

  • Grease a 33cm by 23cm or similar-sized baking dish.

  • Scatter half of the cubed buns into the dish and top with half of the broccoli and onions before crumbling over half of the feta.

  • Repeat with the remaining half of the bread, broccoli, onions and feta.

  • Mix the eggs, milk and a good pinch of salt and pepper together in a bowl and pour over the bread and broccoli etc.

  • Cover and allow to sit for 1 hour so that the eggs and milk mixture can be absorbed by the bread.

  • Preheat the oven to 180*C.

  • Uncover and bake for approximately 55 minutes to 1 hour or until the middle of the Strata has set and the top is beginning to brown.

Serve hot on its own or with a side salad.

(This is also delicious eaten cold and is great for packed lunches or breakfast on the go etc.)
